One of Southeast Queensland's newest drawcards is an award-winning gin distillery. Imbibis Craft Distillery is Ipswich's craft distillery and has recently moved to Bundamba to support more growth. Imbibis Artisan Distillery was launched in December 2019 by winemaker Jason Hannay and his wife Maree. They promptly scooped two silvers at the 2020 Australian Distilled Spirits Awards for their signature gin and a shiraz brandy. Clarity has all these lovely flavours that blend well, with a really smooth finish, it has bottlebrush flowers and homegrown lemon myrtle and homegrown galangal. Two more creations followed; a Pink Gin and an Australian take on a London dry style called The Three Myrtles with anise, lemon and cinnamon notes rounded out with olive leaf from a specifically chosen tree at Cedar Gully Olives in nearby Mulgowie. This gin has won Silver at the prestigious London Spirits Competition, along with their second Brandy release. Jason was mentored in his early days as a winemaker by Master of Wine Peter Scudamore-Smith and he went on to make wines for Warrego Winery and Flinders Peak Winery. Imbibis is open on Fridays from 10 am to 6 pm for tastings, no appointment necessary. Other times by appointment.
