Pilot. is a small venue in the suburb of Ainslie in Canberra, with just one small dining room and 22 seats.
The restaurant offers the Pilot. Menu each day with an additional lunch set menu available on Fridays and Sundays for lunch service.
Pilot. does not offer an a la carte menu. Instead, it is a collaboration between Dash Rumble (Momofuku Seiobo), Ross McQuinn (eightysix) and Malcolm Hanslow (Ester), and aims to use seasonal ingredients to showcase complex flavours and exciting dishes.
The menu and drinks list are forever changing with many non-alcoholic options.
